During our stay in Tulum, we would walk down the beach to the real coconut kitchen and grab their panda smoothie. It has four simple ingredients: banana, pineapple, dates, and coconut milk. I was inspired to make a copycat at home. They use fresh coconut milk which I don’t have but this one I’m using from Thrive market is pretty close. This smoothie hits the spot every time , especially if you are craving something sweet. Every time I make it, it brings me back to our stay. It’s a must-try.
